A short walkthrough for this lesson is on its way. In the meantime, the lesson and practice below have everything you need.
Four Winds: East, South, West, North. Three Dragons: Red, Green, and White. The White Dragon is usually a blank-ish tile with a frame, and everyone calls it Soap because it looks like a little bar of soap.
There are four of each of these too, which matters when you're hoping to collect three.
The yearly card has whole sections built on Winds and Dragons — hands like 'Winds and Dragons' or hands that pair a Dragon with a suit. Dragons are also popular because each one matches a suit in many hands: Red with Craks, Green with Bams, Soap with Dots.
